Thin skinned kagzi lemons with black salt and no oil at all. The jar is rested a full year before it leaves us, by which time the peel has gone dark and soft and the sourness has rounded out.

No preservatives and no vinegar. Keep the jar closed, always use a dry spoon, and keep a layer of oil above the pieces. No fridge needed.
